Popo Chicken

Ingredients

  • 1.5kg chicken cut into 12 pieces, washed with fine salt and rinsed well. Pat dry with kitchen towel.

Seasoning Ingredients

  • 2 tablespoons soya sauce

  • 2 tablespoons Maltose (Processed sugar obtained from Chinese Medical Hall). Mix well with 5 tablespoons of water and boil till dissolved.

  • 1 tablespoon ground black pepper

Oil For Frying

  • 4 tablespoons QBB

  • 500 ml cooking oil

Sauce Ingredients

  • 3 stalks red chillies

  • 5 stalks chilli padi

  • 5 cloves garlic

  • 3 cm ginger

  • 1 tablespoon sugar

  • 2 tablespoons tamarind paste

  • 8 tablespoons water (*Grind to fine texture)

Instructions

  1. 1. Marinate the chicken pieces with seasoning ingredients and leave them overnight in the refrigerator.

  2. 2. Heat oil in wok.

  3. 3. Stir-fry the chicken until golden and cooked.

  4. 4. Place the chicken on a plate, serve with sliced cucumber and chilli sauce.
